Throw this casserole in the oven while you work on your Sunday Wordle and you’ll have a flavorful, low calorie breakfast for the week. On its own, with a spring salad or throw it on a toasty English muffin for a breakfast sandwich on the go.

- 5 eggs
- 1 cup egg beaters
- 2 cups chopped fresh spinach
- 1/4 tsp kosher salt
- 1/2 tsp onion powder
- 2.5 oz swiss cheese
- 5 slices Canadian bacon, chopped
- non stick spray
Instructions
- Preheat your oven to 350 degrees.
- Coat a 8×10 casserole dish in non stick spray.
- Whisk the eggs, egg beaters, salt and onion powder together (I like to use an immersion blender).
- Layer the spinach, Canadian bacon and cheese in the casserole dish.
- Pour the egg mixture on top.
- Bake for 35 minutes or until set.
- Slice into 8 rectangles.
