This has been my weekday lunch go-to. It’s healthy, easy and great to make in advance. There’s no mayo so its perfect for a beach day or a picnic. Pair it with tomato and avocado and it makes a great salad or sandwich.

Light and tangy, this mayonnaise-free chicken salad is a perfect summer dish.
Ingredients

- 2 chicken breasts, shredded (about 3 cups)
- 2 tbsp olive oil
- 4 tbsp balsamic vinegar
- 1 tbsp dijon mustard
- 1 shallot, diced
- 1 tbsp fresh chopped basil
- salt and pepper
Instructions
Mix together all ingredients except the chicken. Combine the chicken with the dressing. Serve over your favorite lettuce with tomato and avocado or on bread.
