Freezer-friendly, healthy, luxurious weekday breakfast.


Ingredients

Units Scale
  • 5 eggs
  • 1 cup egg beaters
  • 2 cups chopped fresh spinach
  • 1/4 tsp kosher salt
  • 1/2 tsp onion powder
  • 2.5 oz swiss cheese
  • 5 slices Canadian bacon, chopped
  • non stick spray

Instructions

  • Preheat your oven to 350 degrees.
  • Coat a 8×10 casserole dish in non stick spray.
  • Whisk the eggs, egg beaters, salt and onion powder together (I like to use an immersion blender).
  • Layer the spinach, Canadian bacon and cheese in the casserole dish.
  • Pour the egg mixture on top.
  • Bake for 35 minutes or until set.
  • Slice into 8 rectangles.
