Description

Throw together a summer side in just a few minutes.


Ingredients

Units Scale
  • 1 corn on the cobb, kernels removed
  • 1 zucchini, shredded
  • 1 egg
  • 1/4 cup flour
  • 1 tbsp cornstarch
  • 1/2 tsp kosher salt
  • 1/2 tsp onion powder
  • olive oil

Instructions

  • Heat a skillet to medium heat with a drizzle of olive oil
  • Shred the zucchini and place in a colander. Squeeze out the extra water from the zucchini.
  • Remove the corn from the cob
  • In a medium bowl combine all the ingredients except olive oil
  • Place heaping spoonfuls of batter in the pan and fry until golden brown 3-4 minutes per side
