Hearty and Simple Slow Cooker Chicken Chili Recipe


Ingredients

Units Scale
  • 2 large chicken breasts
  • 7 oz can of green chiles
  • 1 cup tomatillo salsa
  • 2 cups frozen corn
  • 1 onion, diced
  • 2 cans white beans, rinced
  • 3 cloves of garlic, minced
  • 1 tsp salt
  • 1/4 tsp cayenne
  • 4 tsp chili powder
  • 1.5 tsp cumin
  • 4 cups of chicken broth
  • 4 oz of cream cheese, cubed

Instructions

  1. Place all ingredients EXCEPT the cream cheese in the slower cooker and set to low for 6-8 hours.
  2. When the chicken is cooked through, shred and return to pot.
  3. Add the cubed cream cheese and put the slow cooker on high until the cream cheese is melted and combined.

Enjoy with your favorite toppings:

  • tortilla chips
  • sour cream
  • cheese
  • cilanto
  • lime wedges
  • green onion

Notes

Want to freeze some? Grab a portion before adding the cream cheese. The dairy will separate in freezer so you’ll want to add it after.
